Waterford Ballykilcavan – Edition 1.2 (2020)
Waterford Ballykilcavan – Edition 1.2
Irish Single Malt – Single Farm Origin
This Waterford Ballykilcavan Edition 1.2 is a textbook example of what Waterford Distillery stands for: terroir, transparency, and precision . Made entirely from barley sourced from a single farm: Ballykilcavan , this single malt demonstrates how provenance and farming directly influence flavor.
The whisky was distilled in 2016 and, after four years of maturation, bottled in 2020 at a robust 50% ABV , without chill filtration. Its relatively young age is more than compensated for by its intensity, structure, and purity.
Flavor profile
The nose reveals fresh grains, green apple, pear, citrus, and a light spiciness. The palate is lively and dry, with distinct malt notes, lime, white pepper, green herbs, and a mineral undertone. The finish is tight, clean, and lingering, with a focus on grain and terroir rather than wood.
