The Yellow Spot 12 Years is an iconic single pot still Irish whiskey , bottled by Mitchell & Son and distilled at Midleton . This whiskey has been matured for at least 12 years in a combination of bourbon casks, sherry butts, and rare Malaga wine casks , resulting in a rich and layered style. It is not chill-filtered.
The nose reveals ripe apple, peach, honey, vanilla, and soft spices . The palate is full and creamy, with stone fruit, candied orange, caramel, nutmeg, and a subtle vinous sweetness from the Malaga casks. The finish is long, warm, and elegant , with a beautiful balance of fruit, spices, and wood.
At 43% ABV and with a classic pot still texture, this is a textbook example of high-quality Irish whiskey : rich without being heavy, complex yet perfectly balanced.
